Preservation

Growing resilience through ancient wisdom and modern practice

Methods

Six guides covering the core techniques: heat, cold, salt, smoke, and dry air. Each one walks through the process, the equipment it needs, and how to tell when it went right.

Smoking and Curing Meat at Home

Salt, smoke, and time. Curing pork, fish, and game without refrigeration.

Fermentation in Buckets

Lactic acid fermentation at homestead scale. A food-grade five-gallon bucket, salt weighed as a percentage of the vegetable, and a cool corner is the whole setup. No canner, no pressure gauge, no electricity, and the result keeps without refrigeration.

Every vegetable has its own traditions, and they are worth learning separately. Carrots hold through winter in damp sand. Cabbage becomes sauerkraut or kimchi. Cucumbers take a brine. Beans go into dilly beans or dry into leather britches. Tomatoes ferment into passata and salca. The bucket is the tool; the vegetable decides the method.

Fermenting and Pickling in Five-Gallon Buckets

The method itself: salt by weight, keeping things submerged, and reading the ferment.
